5 Medium Zucchini
1 LB Ground Beef
1/4 Cup Mozzarella Cheese (Shredded)
2 Cups Chicken Broth
1 Red Onion (Chopped)
1 Red Bell Pepper (Chopped)
2 Cloves Garlic (Minced)
2 TBSP Olive Oil
1 TBSP Ground Cumin
1/2 TSP Chili Powder
1 TBSP Sweet Paprika
1 Cup Cherry Tomatoes (Halved)
1/2 Cup Red Beans
1 TBSP Fresh Lime Juice
1 TBSP Fresh Parsley (Chopped)
Pinch of Salt
Pinch of Ground Black Pepper
Preheat oven to 375 degrees.
Slice the zucchinis in half lengthways and use a spoon to scoop out the insides.
Season with salt and pepper and a small drizzle of olive oil.
Place zucchini halves into the oven on a parchment lined baking sheet for 20-30 minutes.
While the zucchini halves cook, add the red onion and garlic to a large skillet, with a drizzle on oil heated to a medium-high heat and cook for 2-3 minutes.
In a medium glass bowl, season the ground beef with the lime juice, paprika, chili powder, cumin, salt and pepper and mix until evenly combined.
Add this beef mixture to the skillet and continue to cook for another 5-8 minutes until the beef is browned.
Add the red beans and cherry tomato halves, as well as the chicken stock and bring to a simmer, reduce the heat and let the sauce simmer until it has thickened.
Remove the zucchinis from the oven and fill with the ground beef mixture and sauce, top each zucchini half with a little shredded cheese.
Place zucchini halves back into the oven for 5 minutes or until the cheese has melted and begins to bubble, sprinkle with chopped parsley and serve.
