1 TBSP Butter
1 LB Cod Fillets
12 Oz Jar of Artichoke Salad
1/3 Cup Sun-Dried Tomatoes
1 Cup Densely Packed Fresh Baby Spinach
2 Cloves Garlic (Minced)
2 TBSP Capers (Drained)
Pat the cod fillets dry and season with salt and pepper.
Melt the butter in a saut? Pan over medium high heat.
Once butter has melted, add the cod fillets and brown for roughly 2 minutes on each side.
Add remaining ingredients to the pan and cook for 6-12 minutes over a medium heat.
Serve with rice, cauliflower or serve on its own.
