Beer Can Chicken Recipe.


Ingredients:


1 (4LB) Whole Chicken (Washed, Rinsed and Giblets Removed)
3 TBSP Olive Oil
1 TSP Salt
1 TSP Ground Black Pepper
1 (12 Oz) Can of Beer (Room Temperature)
1 Lemon (Halved)
1 TBSP Lemon Zest
2 TBSP Fresh Thyme
1 Sprig Fresh Rosemary
2 TBSP Fresh Oregano


Recipe Instructions:


Preheat grill to 375 degrees and setup to cook over indirect heat.
Clean and dry the chicken.
In a small glass bowl combine the oregano, thyme, lemon zest, salt and pepper and mix.
Rub the chicken with the olive oil and sprinkle the dry mixture over the skin of the chicken, massaging into the skin of the chicken.
Open the can of beer and place the sprig of rosemary inside the cavity of the chicken.
Squeeze the juice of the lemon into the can of the beer and slowly lower the chicken, legs first, onto the beer can.
Place the chicken on the grill away from direct heat and cover the grill, cook covered for 1-2 hours, checking the chicken every 15 minutes until the internal temperature reaches 165 degrees.
Remove chicken from the grill, carefully remove the hot beer can from the chicken and allow the chicken to rest for 15 minutes before serving.
