Vegetable Breakfast Bowls Recipe.


Ingredients:


3 Large Potatoes (Peeled and Cubed)
2 TSP Olive Oil
1/2 TSP Salt
1/2 TSP Ground Black Pepper
1 Can Black Beans (Drained and Rinsed)
2 Cups Baby Spinach
1 Zucchini (Chopped)
1 Yellow Squash (Chopped)
1 Red Bell Pepper (Seeded and Chopped)
1/2 Cup Mushrooms (Sliced)
1 1/2 TSP Garlic Powder
1 1/2 TSP Onion Powder
1/2 TSP Paprika
1/2 TSP Red Pepper Flakes


Recipe Instructions:


Add the cubed potatoes and oil to a large skillet over medium heat and sprinkle with the salt and pepper.
Cook for about 20 minutes, tossing occasionally until evenly browned and tender.
Next, add remaining ingredients, except for the black beans and spinach and saut? Until the vegetables are tender, roughly 8-10 minutes.
Add in the spinach and black beans and continue to saut? Until the spinach has wilted and beans are heated through.
To serve, spoon mixture into individual bowls and sprinkle with hot sauce.
