Vegetable Gratin With Spinach Sauce Recipe.


Ingredients:


4 Cups Potato (Washed, Peeled and Thinly Sliced)
1/4 Cup Carrots (Grated)
1/4 Cup Zucchini (Grated)
1/4 Cup Celeriac (Grated)
1 Cup Heavy Cream
1 TBSP Fresh Parsley (Chopped)
1 TBSP Fresh Cilantro (Chopped)
1/2 TSP Ground Nutmeg
Pinch of Salt
1 TBSP Olive Oil
2 Cups Vegetable Stock
1 1/2 Cup Baby Spinach


Recipe Instructions:


Preheat oven to 350 degrees and grease an oven proof dish, set aside.
In a large glass bowl, combine the sliced potatoes and grated vegetables, stir in the heavy cream and season with the fresh herbs, nutmeg and salt.
Place the vegetable mixture into the oven proof dish and bake in the preheated oven for 45 minutes or until the top turns golden-brown.
Meanwhile, in a large pot over medium-high heat, bring the vegetable stock to a rolling boil and add the baby spinach Boil for 1 minutes and then remove from the heat and allow to cool.
Once cooled place the spinach and vegetable stock into the jug of a blender and process until smooth.
Adjust the spinach sauce seasonings with salt, pepper and fresh herbs to taste.
Remove the gratin from the oven when the top is golden-brown and serve with the spinach sauce.
