Vegetarian Ceviche Recipe.


Ingredients:


4 Cups of Lima Beans (Cooked)
1 Red Onion (Sliced Thinly)
2 Tomatoes (Sliced Thinly)
1/4 Cup Fresh Orange Juice
1/4 Cup Fresh Lime Juice
1/4 Cup Fresh Cilantro (Chopped Finely)
2 TBSP Olive Oil
1/4 Cup Tomato Sauce
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


In a large glass bowl, place sliced red onion and sprinkle with 1 TBSP of salt, then cover with warm water and allow to soak for 15 minutes.
Drain and rinse the onion well with cold water.
In a medium glass bowl, combine the washed red onions, tomato slices, lima beans, tomato sauce, chopped cilantro, lime and orange juice, olive oil and salt and pepper.
Mix well and place bowl in the refrigerator for 2 hours.
After 2 hours remove from the refrigerator, place in a serving bowl and enjoy.
