Victoria Sponge Cake Recipe.


Ingredients:


For Cake
1 Cup Butter (Unsalted, at Room Temperature)
1 Cup Sugar
4 Large Eggs
1 1/2 TSP Vanilla Extract
1/2 TSP Almond Extract
2 Cups Self-Rising Flour
For Filling
3/4 Cup Strawberry Jam
3/4 Cup Heavy Whipping Cream
1/2 TSP Vanilla Extract
1 TBSP Sugar
2 TBSP Maple Syrup


Recipe Instructions:


Preheat oven to 350 degrees and grease 2 8" round cake tins.
In a medium glass bowl, beat together the butter and sugar until well combined, smooth and light yellow in color.
Beat in the eggs one at a time, making sure to incorporate them into all of the mixture evenly.
Add vanilla and almond extract and combine evenly in the cake batter.
Add the flour and mix until well combined, the batter should start to thicken.
Divide cake batter between the two cake pans and place in the oven to cook for about 20-25 minutes until the edges start to pull away from the pans.
Remove from oven and cool.
Once cool, remove from pans and place one of the cakes on a plate, spread with strawberry jam.
Meanwhile, whip the cream, add in the sugar and vanilla extract.
Spread whipped cream over the jam, top with second cake.
Brush top of second cake lightly with syrup and dust with confectioners / powdered sugar.
Slice and serve.
