3 TBSP Butter (Unsalted)
1 Shallot (Minced)
2 Cloves of Garlic (Minced)
1/2 Cup Tomato Paste
1/2 TSP Crushed Red Pepper Flakes
3 TBSP Vodka
Pinch of Salt
1/2 Cup Heavy Cream
1/4 Cup Warm Water
1/2 Cup Parmesan (Grated)
In a large pot over medium heat, melt butter and add shallot and garlic, cook until soft and fragrant.
Add tomato paste and red pepper flakes and cook, stirring frequently until paste has coated the shallots and garlic is beginning to turn brown.
Add the vodka to the pot and stir to incorporate, turn heat to medium-low.
Add the 1/4 cup of water and heavy cream, stirring to combine and heat through.
Add the parmesan and stir until melted.
Turn off heat, keep sauce warm and use as required.
