For the Chicken
2 Chicken Breasts (Sliced into Strips)
1 TBSP Cumin
1/2 TSP Salt
1 TBSP Olive Oil
For the Salad
1 Avocado (Pitted, Peeled and Sliced)
2 Cups Mixed Salad Leaves
12 Cherry Tomatoes (Halved)
1/2 Red Bell Pepper (Sliced)
1/2 Red Onion (Thinly Sliced)
1 TBSP Fresh Parsley (Chopped)
For the Dressing
2 TBSP Olive Oil
1/2 TSP Dijon Mustard
2 TBSP Lemon Juice
Pinch of Salt
Pinch of Ground Black Pepper
1/2 TSP Honey
Sprinkle the chicken slices with the cumin and salt and rub in with your hands.
Heat olive oil in a large skillet over medium-high heat.
Once hot, add the chicken slices and cook for 4-5 minutes on each side, until golden brown.
Remove and rest for a few minutes.
Prepare the salad ingredients and whisk together the salad dressing.
Toss the salad (not the avocado) with the dressing and divide between two bowls.
Top with a few slices of chicken each and sliced avocado.
