1 Cup Plain Greek Yogurt
1 TBSP Honey
2 Apples (Peeled, Cored and Chopped)
1/2 Cup Heavy Cream
2 TBSP Butter (Unsalted)
2 TBSP Sugar
1/4 Cup Walnuts (Crushed)
1/4 TSP Ground Cinnamon
In a medium glass bowl, combine the cream, yogurt and honey and whisk until the mixture thickens and forms soft peaks.
Set aside.
In a large, non-stick skillet, over a medium heat, warm the butter until melted and add 1 TBSP of sugar and the chopped apples.
Stir well and cook for roughly 8-10 minutes or until the apples have softened.
Once softened, sprinkle with the remaining sugar and the cinnamon and cook for an additional 1-2 minutes stirring occasionally.
Remove apples from the heat and allow to sit for 5 minutes to cool.
To serve, add the whipped cream and yogurt to the bottom of a highball glass or small bowl, place some of the apple and cinnamon mixture on top then sprinkle with the walnuts to serve chilled.
