1/4 Cup Olive Oil
3 Cloves of Garlic (Thinly Sliced)
3 TBSP Tomato Paste
2 (15 Oz) Cans Cannellini Beans (Drained & Rinsed)
1/2 Cup Boiling Water
Pinch of Salt
Pinch of Ground Black Pepper
1/2 Cup Mozzarella Cheese (Shredded)
Preheat oven to 475 degrees.
In a large oven proof skillet, heat olive oil over a medium high heat until it begins to shimmer.
Add garlic and fry until it begins turning a golden brown color, about 1 minute.
Stir in the tomato paste and continue frying for another 45 seconds.
Add cannellini beans, water, salt and pepper and mix well to combine.
Sprinkle the shredded cheese over the top and then place in the preheated oven for about 10 minutes until the cheese has melted and is bubbly and golden.
Serve hot with sliced and toasted baguette.
