1/2 Cup Peanut Butter
4 TBSP Butter (Unsalted, Softened)
2 Eggs
1 TSP Vanilla Extract
3 TBSP Cocoa Butter (Melted)
1/4 Cup Almond Flour
1 TBSP Coconut Flour
1/2 Cup Truvia
1/4 Cup Cocoa Butter (Chopped)
Preheat oven to 350 degrees and lightly grease a 9x9 baking dish with coconut cooking spray, set aside.
Using an electric mixer, combine the peanut butter, softened butter, eggs, vanilla extract and 3 TBSP of cocoa butter until smooth and well combined.
Add in the flours, sweetener and chopped cocoa butter, mix.
Spread mixture into the prepared 9x9 baking dish and bake in the preheated oven for 25-30 minutes until the center is firm and the edges are golden and crisp.
Remove from the oven, cool completely and then chill in the refrigerator for 3 hours before cutting into squares.
