1 Cup Whole Wheat Flour
2 TSP Sugar
1/2 TSP Baking Powder
1/2 TSP Baking Soda
1/4 TSP Salt
1 Cup Buttermilk
2 TBSP Unsalted Butter (Melted)
1 TSP Vanilla Extract
1 Egg
In a large glass bowl, combine together the flour, sugar, baking powder, baking soda and salt.
In a medium glass bowl combine the buttermilk, butter and egg.
Make a well in the center of the dry ingredients and add the buttermilk, melted butter, vanilla and egg mixture.
Whisk briefly to combine.
Set batter aside for 10 minutes.
Dampen a paper towel with a little vegetable oil and wipe the towel across the surface of a frying pan or griddle.
Heat pan over medium heat and add 1/3 cup pancake batter to pan or griddle.
Cook for 2 minutes until small bubbles have begun to form on the top and edges of the pancake begin to turn golden brown.
Flip and cook for another 1-2 minutes on the other side.
Serve warm and enjoy with maple syrup, cream, jelly or sugar!
