Whole Wheat Pasta Recipe.


Ingredients:


4 Large Eggs (Room Temperature)
1 1/4 Cups All Purpose Flour (Or "00" Flour, Semolina Flour, Or a Blend)
1 1/4 Cups Whole Wheat Flour
1 TBSP Olive Oil
1 TSP Fine Sea Salt


Recipe Instructions:


Add all ingredients to the bowl of a food processor, fitted with a regular blade attachment.
Pulse for about 20 seconds (or until the mixture reaches a crumb looking mixture).
Remove the pasta dough from the processor bowl and form it into a ball with your hands, place onto a lightly floured surface and knead the dough for roughly 2-3 minutes until it becomes smooth and elastic.
If the dough is too dry add a few drops of water, if too sticky, add a little more flour).
Form the dough into a ball with your hands and wrap tightly with plastic wrap.
Allow dough to rest at room temperature for 30 minutes.
Use immediately or refrigerate for 24 hours.
If using immediately, roll out the pasta on a lightly floured surface with a rolling pin or use a pasta machine.
Cook pasta in a large pot of salted water for between 2-4 minutes depending on the thickness of the pasta.
