1 Cup Long Grain Rice
2 Zucchinis (Grated)
2 TBSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
Cook the rice according to package directions.
When the rice is cooked, remove from the heat and add the zucchini and oil, do not mix, place lid back onto the pan and allow to stand for 5 minutes for the oil to lubricate the rice.
After 5 minutes, stir to combine the rice and zucchini evenly, season with salt and pepper and serve warm.
