2 large eggs
½ TSP of lime juice or plain vinegar
1 TSP of Thai fish sauce
1 TBSP water
1 TBSP rice flour or cornstarch
¾-1 cup of plain vegetable oil
Combine eggs, lime juice or vinegar, fish sauce, water, and rice flour or cornstarch in a medium bowl.
Beat with a fork until frothy.
If the flour forms a few lumps, break up as many as possible with your fingers.
