1/2 Tbsp Butter
3 Eggs, whisked
Salt
Freshly ground pepper
2 oz Chèvre (goat cheese), crumbled
2 Strips thick cut bacon, cooked until crisp and roughly cut
1/2 Avocado
Microgreens for garnish
In a 8” fry pan, melt butter over medium/low heat and swirl to coat bottom.
Slowly pour the eggs into the pan.
Sprinkle with a pinch of salt and freshly ground pepper and allow to cook until eggs are almost set.
About 2-3 minutes.
Using a large spatula, carefully flip the eggs and remove from heat.
On one half of the eggs add goat cheese, bacon and avocado.
Fold in half and serve with microgreens.
