4 medium yellow potatoes
5 slices (25 ounces or 75g) Bacon, cooked, chopped
3 each (55g) Green Onions
1/3 cup (78g) shredded Cheddar Cheese
2/3 cup (160ml) Mayonnaise
2/3 cup (160ml) Light Sour Cream
½ tsp (~1g) garlic powder
1 tsp (~1g) Sea Salt
1 tsp (~1g) Black Pepper, ground pepper
Add your yellow potatoes to a pot of cold, salted water.
Boil until easily pierced with a fork, drain and rinse in cool water.
Allow the potatoes to cool completely before adding the other ingredients.
Add all remaining ingredients to the potatoes, mix, and smash potatoes with a fork until well combined.
Place in the refrigerator for 3-4 hours prior to serving or until well chilled.
Enjoy this salad with all your favorite picnic foods.
