1-1/2 cups Dehydrated Shredded Potatoes
As Needed Hot Water
½ cup All Purpose Flour
1 TSP Italian Seasoning
½ TSP Garlic Powder
½ TSP Kosher Salt (Iodized can be used but sub only ¼ TSP)
¼ TSP Fresh Ground Black Pepper
4 each Mozzarella String Cheese Sticks
3 cups Vegetable Oil, for Frying
½ cup Canned Prepared Marinara Sauce
Place the shredded potatoes in a bowl and cover with enough hot water to submerge them by 1 inch.
Cover with a lid, plate, or piece of plastic wrap and allow the potatoes to soak for 10 minutes.
Drain the potatoes very well and combine them with the flour, Italian seasoning, garlic powder, salt, and pepper.
Using your hands combine the mixture, breaking up some of the shredded potatoes.
This will help the potatoes stick together better around the mozzarella sticks.
Cut the mozzarella sticks in half, creating two shorter mozzarella sticks.
There should be two (1/2 mozzarella sticks) per person.
Carefully form a thin (1/4 inch) layer of the seasoned shredded potato mixture around each mozzarella stick, be sure to not leave any of the mozzarella exposed otherwise the cheese will melt into the oil while frying.
Place them in the fridge, uncovered for 5-10 minutes while the oil preheats.
Add the vegetable oil to a deep-sided saucepan or pot, a deep fryer can even be used.
Heat the oil over medium heat temp until the oil reaches 365 Degrees on a thermometer.
Add the mozzarella sticks and fry until golden brown on all sides, about 5-6 minutes.
Remove from the oil and drain well.
Serve while still hot with the marinara sauce.
