Taters on the Half Shell Recipe.


Ingredients:




48 each Potato Half Shells, Frozen
As Needed Nonstick Pan Spray
48 ounces Guacamole, Prepared


Recipe Instructions:


Preheat the oven to 450 Degrees.

Arrange the frozen half shells onto baking sheets with wire rack inserts
Bake the frozen potato half-shells for 20 minutes, or until they are golden brown and crispy on the outside.

Remove from the oven and allow them to cool on the racks.
Store in refrigerator until ready to use.

Serve two chilled potato half shells with two ounces of prepared guacamole.


Meal Components: ½ cup starchy vegetable, ¼ cup other vegetables

Notes: Serve for breakfast with a serving of yogurt, and a whole grain serving such as whole-grain tortilla chips.
