Parchment Pouch Fish with Fingerling Potatoes Recipe.


Ingredients:




2 – 6 oz barramundi Filets
2 cups fingerling potatoes
2 cups fresh green beans
2 cloves of garlic
1 TBSP olive oil
1/2 TSP sea salt
1/2 TSP black pepper
1/2 TSP paprika
1 medium lemon
Thyme sprigs


Recipe Instructions:


Preheat oven to 375º F
Par boil the potatoes for 8-10 minutes in boiling water
Arrange the potatoes, then the green beans in the center of the parchment paper.
Place the fish over the beans and sprinkle with salt, pepper, paprika.
Add 2 lemon slices then top with 2 thyme sprigs
Drizzle oil over everything
Fold the sheet of parchment into a sealed packet
Place on a baking sheet and bake for 15 minutes
