Frozen Potato Basket Weave Cuts
Thinly sliced eggplant
3 TBSPs olive oil
1 cup crumbled goat cheese
1/2 cup cilantro leaves
Frying oil
Heat oil to 355ºF.
Roast eggplant slices in a frying pan over high heat with olive oil; season with saltand pepper.
When eggplants are half cooked, fry potatoes in frying oil; drain over papertowels.
Build a tower alternating eggplant and potatoes; garnish with goat cheese and cilantro leaves.
