Chorizo stuffed potatoes
12 frozen half-shell potatoes
400 g chorizo, chopped
1/2 onion, chopped
2 garlic cloves, chopped
1 cup double cream cheese, crumbled
2 guajillo chilies, thinly sliced
Sauté the chorizo with the garlic and onion; season, add chilies and remove from heat when they begin to brown.
Meanwhile, bake potatoes at 355ºF for 8 minutes.
Stuff them with the chorizo mixture and add cheese.
