4 Flounder filet
4 oz Crab meat
1 tbsp Olive oil
1 minced garlic clove
1/3 cup finely diced onions
2 tbsp Finely minced celery
1 tbsp Finely minced carrots
2 tbsp Sliced scallions
1 tbsp Butter
1 tbsp All purpose white flour
1/2 cup sour cream
Paprika powder
Salt and pepper to taste
lemon butter sauce
2 tbsp Butter
1-2 tbsp Fresh squeezed lemon juice
1 tbsp Chopped parsley
Salt and pepper to taste
CRAB MEAT STUFFING PREPARATION
In a small skillet heat olive oil.
Add garlic, onions, celery, carrots, sliced onions and cook until just start browning a bit.
Incorporate crab meat, butter and let it melt.
Add flour and cook for a couple of minutes.
Mix in the sour cream and cook for 2 minutes.
Let it cool off.
STUFF THE FLOUNDER FILET AND COOK
Pat dry the fish filet with paper towel.
Scoop the stuffing over filet and roll it, place it seam side down in a buttered baking dish.
Season the fish top with, salt, pepper and brush it with melted butter.
Broil the stuffed flounder for about 10 minutes.
MAKE LEMON BUTTER SAUCE
In a skillet melt the butter.
Mix in lemon juice, parsley, salt and pepper.

SERVING THE DISH
Place the flounder in a plate, drizzle it on top with the lemon butter sauce and serve with the basmati rice.
