2 Lbs flounder fillet
3 eggs
8 oz Italian Seasoned breadcrumbs
8 oz Panko breadcrumbs
Salt and pepper to season
Enough oil to fry
Fillet fish as best as you can, you can get 2 fillets per side.
Make sure you skin the fish afterwards.
Wash thoroughly, let drain and season with salt & pepper.
Mix Italian breadcrumbs with panko.
Place fillets on large platter, beat eggs and pour on top of fillets and coat thoroughly.
One by one coat with breadcrumb mix and fry on med high for 5 min on each side.
