2 (145 Oz) Cans of Black Beans (Drained & Rinsed)
1 Cup Tomato Salsa
1 1/2 TSP Chili Powder
1 TSP Ground Cumin
Pinch of Salt
Pinch of Ground Black Pepper
1/2 Medium Avocado
1/2 Cup Plain Greek Yogurt
1 Cup Fresh Cilantro (Chopped)
1 TBSP Lime Juice
1 Clove of Garlic (Minced)
In a medium saucepan over medium heat, combine the black beans, salsa, chili powder and cumin.
Simmer mixture for about 10 minutes, stirring occasionally.
While the black bean mixture heats up, in the bowl of a food processor, pulse together the avocado, Greek yogurt, cilantro, lime juice and garlic until the cilantro is finely minced.
Season with salt and pepper and blend for another 5 seconds.
Remove black beans from heat and spoon on to a tortilla, add avocado cilantro lime dressing and add your choice of toppings.
