2 cans (14-1/2 ounces each) sliced beets
1 TBSP butter
1 TBSP finely chopped onion
2 TBSPs all-purpose flour
2 TBSPs cider vinegar
1 TBSP sugar
1/2 TSP salt
1/8 TSP pepper
Drain beets, reserving 1 cup liquid.
In a saucepan, heat butter over medium-high heat; saute onion until tender.
Stir in flour until blended.
Gradually stir in reserved beet liquid.
Bring to a boil; cook and stir until thickened, about 2 minutes.
Stir in remaining ingredients and beets; heat through.
