2 Eggs (Separated)
1 1/2 Cups Milk
1/2 Cup Butter (Melted)
2 Cups Flour (Almond, Coconut, Quinoa, Chickpea, Etc)
2 TSP Baking Powder
1/2 TSP Salt
1 TBSP Honey
1 Cup Fresh Blueberries
In a small mixing bowl, beat the egg whites until stiff, set aside.
In another bowl, beat the egg yolks, add milk and melted butter.
Sift all dry ingredients together, add to the egg yolk mixture and mix until combined.
Add in the honey and half the fresh blueberries and mix lightly.
Gently fold in the beaten egg whites and cook in a hot waffle iron.
