2/3 cup creamy peanut butter
1/2 cup packed brown sugar
1/4 cup sugar
1/4 cup unsweetened applesauce
2 large eggs, room temperature
1 TSP vanilla extract
1 cup gluten-free all-purpose baking flour
1-1/4 TSPs baking powder
1 TSP xanthan gum
1/4 TSP salt
1/2 cup semisweet chocolate chips
1/4 cup salted peanuts, chopped
In a large bowl, combine the peanut butter, sugars and applesauce.
Beat in eggs and vanilla until blended.
Combine the flour, baking powder, xanthan gum and salt; gradually add to peanut butter mixture and mix well.
Stir in chocolate chips and peanuts.
Transfer to a 9" square baking pan coated with cooking spray.
Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Cool on a wire rack.
Cut into squares.
