For Pancakes
6 Bananas
6 Eggs
150g Rolled Oats
2 TSP Baking Powder
1 TSP Salt
225g Fresh Blueberries
For Apple puree
2 Apples
5 Dates (Pitted)
1 TBSP Lemon Juice
1/4 TSP Ground Cinnamon
Pinch of Salt
Place rolled oats into the bowl of a blender and pulse for 1 minute or until a fine flour has been made.
Next, add the bananas, eggs, baking powder and salt to the blender and pulse until a smooth batter forms.
Transfer the mixture to a large glass bowl and fold in the fresh blueberries, set aside for 10 minutes.
While the baking powder activates in the pancake batter, core and roughly chop the apples and place them along with the other ingredients into the bowl of a food processor along with 2 TBSP of water.
Pulse until a smooth puree forms and transfer to a bowl.
In a large, non-stick skillet, over medium-high heat place a 1/2 tbsp of butter and add 1/4 cup of the pancake batter and cook until the pancake is golden on the bottom side, roughly 3 minutes, flip the pancake and cook the second side for 1-2 minutes.
Once pancakes are cooked, top with the apple puree and enjoy.
