1 LB Beef & Pork Trimmings
1/4 Lb Pork Back Fat
1/4 LB Rusk (Soaked)
1/8 LB Rusk (Dry)
1/3 LB Farina
3 TSP Salt
4 TSP Ground White Pepper
1/2 TSP Paprika
1/4 TSP Ground Ginger
1/2 TSP Ground Sage
1/8 TSP Ground Cinnamon
1 TSP Red Food Coloring
1/2 TSP Liquid Smoke
Soak rusk in cold water.
Grind meat and fat with 1/8” plate.
Mix well to combine with all other ingredients.
Stuff into 30 mm hog casings.
Cook in water at 176? degrees degrees for 30 minutes.
Refrigerate.
