1 TBSP Unflavored Gelatin
2 TBSP Cold Water
2 Cups Heavy Cream
1 Cup Half & Half
1/3 Cup Sugar
1 Cup Fresh Blueberries
1 1/2 TSP Vanilla Extract
In a food processor, blend blueberries until smooth then, pass the puree mixture through a fine sieve to remove seeds and set aside.
In a small saucepan sprinkle gelatin over water and let stand for about 90 seconds to soften.
Heat gelatin mix over a lot heat until gelatin is dissolved and remove the pan from the heat.
In a large pan, bring cream, half & half and sugar to a boil over a medium-high heat, stirring constantly.
Remove pan from heat and stir in blueberry puree then gelatin mixture and vanilla extract.
Divide mixture into several ramekins and cool to room temperature.
Once cooled place covered ramekins in to the refrigerator for 3-4 hours or overnight.
