1 Cup Butter (plus extra for greasing)
1 Large Egg
4 TBSP Milk
1 Cup Golden Syrup
1/2 Cup Treacle
1/2 Cup Light Brown Sugar
1/2 Cup Oatmeal
1 1/4 Cup Self-Raising Flour
1 TBSP Ground Ginger
Heat oven to 350 degrees and butter a deep 8" square cake pan and line with
baking parchment.
Beat the egg and milk together with a fork.
Gently melt the syrup, treacle, sugar and butter together in a large pan until
the sugar has dissolved.
Remove from the heat.
Mix together the oatmeal, flour and ginger and stir into the syrup mixture,
followed by the egg and milk.
Pour the mixture into the cake pan and bake for 50 to 60 minutes until the cake
feels firm and a little crusty on top.
Cool in the pan then wrap in more parchment and foil.
Keep for up to five days before eating, the longer it is left alone will depend
on how soft and sticky it becomes.
