Boudin Balls Recipe.


Ingredients:


1 LB Boudin Sausage
4 Large Eggs (Lightly Beaten, Divided)
1/2 TSP Salt
1/4 TSP Hot Sauce
1/4 TSP Cayenne Pepper
1 1/2 Cups Panko Breadcrumbs


Recipe Instructions:


Remove the boudin sausage from the casings, discard casings and break the boudin up into small chunks.
Add two lightly beaten eggs to the sausage mixture in a medium glass bowl and mix together.
Using your hands, form the boudin mixture into small balls roughly 1 1/2" in size.
In a shallow glass bowl, combine the remaining two eggs, salt, cayenne pepper and hot sauce.
Spread the panko evenly onto a plate or in a separate glass bowl.
In a large skillet, pour enough oil to cover the boudin balls 1/2 way and heat the oil over a medium heat until it begins to shimmer.
Working in several batches, roll the boudin balls into the egg mixture, followed by the panko breadcrumbs, making sure to coat them evenly with the panko.
Place the boudin balls into the hot oil several at a time and fry until they are golden brown on all sides, roughly 305 minutes per batch.
Drain the boudin balls on kitchen paper and serve warm once all of the boudin balls have been fried.
