Brains On Toast Recipe.


Ingredients:


2 Calf Brains
3 Cups Milk
6 Cups Beef Broth
2 TBSP All Purpose Flour
1 TBSP Butter
1/2 TSP Salt
1/2 TSP Ground Black Pepper
4 Slices French Bread (Cut on an Angle)
1 TBSP Capers
1 TBSP Fresh Parsley (Chopped)
1/2 Cup Heavy Cream
1/2 Lemon (Juiced)


Recipe Instructions:


Rinse brains in cold running water for 20 minutes, place in a bowl and cover with milk and refrigerate overnight.
The following day, rinse the brains again and pat dry.
Bring the beef broth to a boil in a large pan, add brains and remove the pan from the heat, allow brains to poach for 10-12 minutes.
Place brains in a medium bowl of cold water, once chilled, remove any outer membrane and residue of blood or nerve and slice each brain into 2 pieces.
Toast 4 slices of bread until well toasted but not burnt.
Preheat oven to 180 degrees.
Heat a skillet until smoking hot, dust brains with all-purpose flour and season well with salt and pepper, fry in oil until golden on one side.
Flip the brains and baste with butter until butter foams and brains are well colored on each side.
Transfer the brains to a baking pan and place in the oven for 2 minutes.
Meanwhile in the same skillet, add a squeeze of lemon juice, add cup of cream, parsley and capers and mix (scraping bottom of the skillet to get all flavor combined).
To serve, place brain slice on top of a piece of toast and drizzle with lemon caper sauce, eat immediately.
