3 TBSP Butter (At Room Temperature)
12 Slices of Bread (White or Brown, Cut into Squares)
1/2 Cup Raisins
1/2 TSP Ground Nutmeg
1/4 TSP Ground Cinnamon
1 1/2 Cups Milk
1/4 Cup Heavy Cream
2 Large Eggs
1/4 Cup Sugar
1 TSP Vanilla Extract
Preheat oven to 350 degrees and grease a 1-quart dish with a little butter.
Spread butter one side of the bread and arrange half in the dish butter side up and sprinkle with half of the raisins, then 1/2 of the ground cinnamon and half of the nutmeg, repeat this one more time with the remaining bread.
In a pan over medium heat, heat the milk, cream and vanilla extract but do not let boil, once heated set aside.
In a medium heat proof bowl, beat the eggs with the sugar until light yellow in color.
Slowly pour the warm milk over the egg mixture, whisking continuously.
Slowly pour the egg and milk mixture over the bread, making sure to cover the bread and raisins evenly, sprinkle with a little additional sugar (if required) and set aside for 1 hour.
After 1 hour, place the dish in the oven for 45-60 minutes until the pudding is golden brown and the mixture has risen and has set.
Serve warm or allow to cool and serve with English custard or cream.
