1/3 Cup Mixed Berries (Fresh or Frozen & Thawed)
1 Cup Unsweetened Almond Milk
1/4 Cup Chia Seeds
1 TBSP Pure Maple Syrup
1/2 TSP Vanilla Extract
1/2 Cup Fat-Free Plain Greek Yogurt
1/4 Cup Granola
Puree 1 1/4 Cups of the mixed berries in a blender or food processor until smooth.
Move blended berries into a medium glass bowl and mix in the chia seeds, maple syrup and vanilla until well combined.
Cover and refrigerate overnight.
Divide the chia pudding mixture between two bowls, layering each serving with 1/4 cup of the remaining mixed berries, 1/4 Cup of Greek Yogurt and 2 TBSP Granola.
Enjoy immediately.
