Breakfast Fried Rice Recipe.


Ingredients:


2 TBSP Butter
3 Eggs (Beaten)
1 oz Breakfast Sausage (Casings Removed)
1/2 Onion (Finely Diced)
6 Cups White Rice (Cooked)
2 TBSP Soy Sauce
1/2 TSP Salt
1/2 TSP Ground Black Pepper
1/2 Cup Cheddar Cheese (Shredded)
1/2 Cup Frozen Peas
1 TBSP Fresh Parsley (Chopped)


Recipe Instructions:


In a large skillet, over medium-high heat, add 1 TBSP of butter and melt until just beginning to bubble.
Add the eggs and gently scramble until they begin to turn soft.
Remove from the skillet to a bowl and set aside.
Add the remaining butter to the same skillet and the sausage, and onion to and cook, breaking up the sausage meat into small pieces until sausage is cooked and onion is tender, about 5-6 minutes.
Add the rice to the sausage and onion mixture and fry until heated through breaking up any clumps of rice as it cooks.
Add the soy sauce, salt, pepper and cook for 1 minute stirring.
Add scrambled eggs, cheese and peas to the mixture and str to combine until the cheese has melted.
Adjust seasoning as needed, serve warm.
