1 Cup Red Onion (Diced)
1 Cup Roma Tomato (Chopped)
1 Cup Baby Spinach
1 Cup Quinoa (Cooked)
1 Cup Black Beans (Drained)
1 TBSP Coconut Oil
1 TBSP Sriracha
1 TSP White Vinegar
Pinch of Salt
Pinch of Black Pepper
In a large skillet over medium heat, melt the coconut oil and add the onions and saut? Until translucent.
Add the tomatoes and allow them to break down, roughly 4-5 minutes.
Next add the spinach and a pinch of salt and pepper and stir.
Once spinach has wilted, add the quinoa and mix well, remove the pan from the heat and stir in the sriracha.
Place 1/4th of the quinoa mixture in a bowl and top with black beans, serve warm.
