1 LB Cauliflower (Cooked and Split into Bite-Sized Florets)
1 3/4 Cups Refried Beans
1 Cup Bacon (Cooked & Chopped)
6 Eggs
1/3 Cup Whole Milk
Pinch of Salt
Pinch of Ground Black Pepper
1 1/4 Cup Cheddar Cheese (Grated)
1/4 Cup Salsa
In a skillet over a medium high heat pour 1 TBSP olive oil, heat and then add the cauliflower florets and season with salt and pepper.
Cook until the cauliflower begin to turn an even golden-brown color.
While cauliflower cooking, in a medium glass bowl, add the eggs and milk and whisk until combined.
Pour egg and milk mixture into a buttered skillet over medium heat and cook until the eggs are scrambled and set.
To assemble breakfast tacos, spread a heaped spoonful of refried beans down the middle of a flour tortilla, pile on some scrambled eggs, cheese, cauliflower, bacon and salsa, fold in half and serve immediately with sour cream if desired.
