1 Cup All Purpose Flour
Pinch of Salt
2 Large Eggs
2 1/2 Cups Whole Milk
2 TSP Butter (Melted)
Sieve the flour into a large glass bowl, add the salt.
Make a well in the center of the flour and add the eggs.
Beat well until smooth and lump free.
Add half of the milk and the 2 TSP of melted butter, beat well.
Add remaining milk and rest mixture for 15 minutes.
Dampen a paper towel with a little vegetable oil and wipe the towel across the surface of a frying pan or griddle.
Heat pan over medium heat and add enough pancake batter to pan or griddle to lightly coat the bottom of the pan and cook until just lightly golden brown, about 2 minutes.
Using a spatula, flip the pancake and cook on the other side for about 2 more minutes.
Slide the pancake from the pan onto a warm plate and cover with paper towel, once all of the batter has been used serve pancakes with lemon juice and sugar.
