1 Cup Dates (Pitted & Diced)
1 1/4 Cup Red Wine Vinegar
1 Cup Dark Brown Sugar
2 Granny Smith Apples (Peeled, Cored and Grated)
1/4 TSP Ground Ginger
1/4 TSP Ground All Spice
1/4 TSP Ground Nutmeg
In a heavy bottomed pan, over medium heat, heat the red wine vinegar and stir in the brown sugar gradually and bring to a simmer for 10 minutes.
Remove from heat and stir in the grated apple, chopped dates and spices, cover and leave to infuse for 1 1/2 hours.
Remove cover and bring mixture to a simmer for 1 hour making sure it doesn't burn on the bottom by stirring frequently.
Once sauce thickens remove from the heat and place brown sauce into a blender and puree until it becomes really smooth.
After blending, pass sauce through a fine sieve, making sure to press it through with the back of a wooden spoon or spatula and store in an airtight container in refrigerator for up to 2 months.
