Prawn, lemongrass and soba noodle soup Recipe.


Ingredients:



2 TBSP sesame oil
2 eschalots, thinly sliced
1" piece fresh ginger, thinly sliced
1 Stalk of lemongrass, white part only, halved lengthwise, bruised
8 cups chicken stock
3/4 LB medium shrimp, peeled (tails intact), deveined
1/2 LB dried soba noodles
2 TBSP soy sauce
1 TBSP mirin
1 TBSP rice vinegar
1 TSP sesame seeds
1 long red chilli, thinly sliced
2 long green shallots, thinly sliced


Recipe Instructions:


Heat sesame oil in a large saucepan over medium-high heat.
Add the eschalots and ginger and cook, stirring, for 3-4 minutes until eschalots have softened.
Add lemongrass and chicken stock and bring to the boil.
Reduce heat to low and simmer for 35-40 minutes until infused.


Add the prawns and cook for 2-3 minutes, then add the noodles, stirring frequently.
Add the soy, mirin and vinegar.
Divide soup among bowls and scatter with sesame seeds, chilli and long green shallot to serve.
