Brown rice and smoked salmon sushi bowls Recipe.


Ingredients:


1/2 Cup brown rice
2 TBSP rice vinegar
1 TSP mirin
1 TBSP soy sauce
1/2 TBSP each white and black sesame seeds, plus extra to serve
1 1/2 TBSP mayonnaise
1 TSP Sriracha
Juice of 1/2 lime, plus lime wedges to serve
1/2 bunch coriander, leaves finely chopped, plus extra leaves to serve
1 Cup smoked salmon
1/2 avocado, cut into thin slices
1 Cup frozen edamame pods, blanched
2 TSP pickled ginger


Recipe Instructions:


Cook the rice according to packet instructions, then drain and set aside.

Combine the rice vinegar, mirin and soy sauce in a bowl.
Add the rice and toss to coat, then sprinkle in the sesame seeds.
Set aside.


Combine the mayonnaise, Sriracha, lime juice and coriander in a small bowl.
Divide the rice among two serving bowls and top with smoked salmon, spicy mayonnaise, avocado, edamame, ginger and extra coriander leaves

Sprinkle over extra sesame seeds and serve with lime wedges to squeeze over.
