1/2 Onion (Diced)
2 TBSP Olive Oil
2 Cloves of Garlic (Minced)
2 Cups Mashed Potatoes
1/2 Cup Cabbage (Cooked & Shredded)
1/2 Cup Broccoli Florets
1 TBSP Butter (Unsalted)
Pinch of Ground Black Pepper
In a large skillet over medium heat, heat the olive oil and butter.
Add the diced onions and saut? For about 5 minutes until onions are translucent.
Add in the minced garlic and cook for another 1 minutes until fragrant.
Add broccoli and cabbage to the onion mixture and season with pepper to taste.
Brown vegetable mixture for about 5 more minutes stirring constantly.
Add mashed potatoes to skillet, pressing down to form a flattened patty and brown for about 5 minutes.
Carefully flip the potato and vegetable patty and cook for an additional 5-6 minutes or until browned and crispy.
Transfer to a platter and slice to serve.
