1/2 cup light soy sauce
1 TSP dashi powder
Juice of 2 limes
1 TBSP mirin
2 TBSP sesame oil
1 LB sashimi-grade mulloway
2 jalapenos, thinly sliced
2 habanero chillies, thinly sliced
Japanese spice mix and micro greens, to serve
Combine soy, dashi, lime juice, mirin and sesame oil in a small bowl.
Season.
Thinly slice fish and arrange in a single layer over serving plates.
Spoon over a little dressing and scatter with jalapeno, habanero, togarashi and micro coriander to serve.
