Cajun Couscous Salad Recipe.


Ingredients:


1 1/4 Cups Water
1 Cup Couscous
2 1/2 TSP Cajun Seasoning
2 Celery Ribs (Chopped)
1 Red Bell Pepper (Chopped)
1 Small Red Onion (Chopped)
1 Lemon (Juiced)
2 TBSP Olive Oil
1 TBSP Honey
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


In a medium saucepan over high heat, bring the water and 1/2 TSP of the Cajun seasoning to a rolling boil.
Stir in the couscous, cover, remove from heat and allow to stand for 5-10 minutes.
Fluff the couscous with a fork, place into a large glass bowl and add the celery, bell pepper and onion, toss to mix well and refrigerate for 20 minutes.
After chilling, mix the lemon juice, honey and remaining seasoning together in a small glass bowl with a whisk until well blended and beginning to emulsify, add the sauce mixture to the couscous and mix to coat well.
Serve at room temperature or chill until ready to use.
