1 LbRaw Prawn (Peeled and Deveined)
1 TBSP Butter (Unsalted)
1/2 Cup Red Bell Pepper (Finely Diced)
3 Cloves of Garlic (Minced)
1 1/4 TSP Cajun Seasoning
Pinch of Salt
Pinch of Ground Black Pepper
1 (8 oz) Package Cream Cheese (Softened)
1/2 Cup Sour Cream
1 TSP Lemon Juice
1/3 Cup Parmesan Cheese (Finely Grated)
1 1/2 Cups Mozzarella Cheese (Shredded)
2 TBSP Scallions (Sliced)
Preheat the oven to 400 degrees and coat a small baking dish with cooking spray, set aside.
Chop prawn into 1/2" pieces.
In a large skillet, over medium heat, add the butter and allow to melt.
Add the chopped prawn to the pan and cook for 2 minutes.
To the prawn add the bell peppers, garlic and Cajun seasoning and continue to cook for 2 minutes until the prawn are pink and opaque.
Season with salt and pepper.
Pour the prawn and pepper mixture into a large glass bowl and add the cream cheese, sour cream, lemon juice, parmesan cheese and 3/4 cup of mozzarella cheese, stir gently to combine.
Once combined, spread the prawn mixture into the prepared baking dish and top with remaining mozzarella cheese.
Bake in the preheated over for 15-20 minutes until the dip is a golden brown color and the cheese is bubbling.
Serve with slices of toasted bread or chips for dipping.
