2 TSP Olive Oil
1 Clove of Garlic (Minced)
2 TBSP Red Onion (Chopped)
1/4 Cup Green Bell Pepper (Chopped)
1/4 Tomato (Chopped)
1/4 TSP Cajun Seasoning
1/4 LB Andouille Sausage (Diced and Cooked)
4 Eggs (Beaten with 2 TBSP Milk)
1/4 Cup Cheddar Cheese (Grated)
In a large non-stick skillet over medium heat, add the oil and heat until shimmering, once oil begins to shimmer add the garlic, onions and bell pepper and cook until the vegetables begin to soften, about 3 minutes.
Add the tomatoes and andouille sausage and reduce the heat to medium.
Add the Cajun seasoning and stir to combine.
Add the beaten eggs and allow to begin setting before starting to stir continuously to scramble, sprinkle with cheese and cook for 1 more minute until the cheese begins to melt.
Remove skillet from heat and serve scrambled eggs while hot.
