Cajun Shrimp And Grits Recipe.


Ingredients:


For the Grits

2 Cups Milk
2 Cups Chicken Stock
1/2 TSP Salt
1 Cup Stone Ground Grits
2 Cloves of Garlic (minced)
4 TBSP Butter (Unsalted)
1/2 TSP Ground Black Pepper

For the Shrimp

1 LB Large Shrimp (Peeled, Deveined and Tails Removed)
2 TBSP Butter (Unsalted)
2 TBSP Cajun Seasoning


Recipe Instructions:


In a saucepan over medium heat, add the milk, chicken broth and salt and bring to a boil then slowly whisk in the grits and minced garlic.
Reduce the heat to a medium-low setting and cook for 20 minutes, whisking frequently.
If the grits start sticking to the pan, reduce the heat.
Remove from the heat and add pepper and butter, stir to combine, cover and set aside.
In a medium glass bowl, season the shrimp with Cajun seasoning and mix gently to coat evenly.
In a large skillet, over medium heat, melt the butter, when hot, add the Cajun seasoned shrimp in a single layer and cook for 2 minutes.
Flip the shrimp and continue to cook for a further 1 minute until the shrimp are pink and slightly opaque.
Remove shrimp from the heat.
To serve, spoon grits into a bowl then top with shrimp and any of the remaining butter in the pan, top with a little chopped parsley and serve immediately.
